Effect of Cultivar and Pre-Processing Storage Conditions on the Quality of Canned Corn Niblet

Thesis Abstract:

 

‘Glutinous Synthetic 22’ and ‘PH801 Sweet Corn’ cultivars were studied to determine carbohydrate metabolism during different storage conditions and its effect on the quality of the processed products.

Both cultivars showed rapid loss of reducing sugars and sucrose with storage time, especially under room temperature (31°C). About 20 to 30% of reducing sugars and 35 to 50% of sucrose originally present, were depleted after one day of storage at 31°C. Low temperature storage (5°C) delayed the loss of sugars. Sweet corn ears without husk had the lowest rate of sugar loss. The decline in sugar content was due to the polymerization of simple sugars as well as respiration.

‘PH801 Sweet Corn’ with high sugar but low starch contents exhibited good quality when processed into canned corn niblets, while the other corn cultivar was found unsuitable for corn niblet processing. The study also showed that pre-processing storage corn greatly decreased the quality of the processed product.
