Study on the Behavior of Fruit Juice Drying with Concurrent Spray Dryer
Abstract:
This research aimed to study the fruit juice drying behavior with concurrent spray dryer on various inlet temperatures of the drying air and atomization air pressure. The temperature of inlet drying air ranged from 115 to 135ºC. Atomization air pressure varied between 0.825 and 0.900 bar.
The research consisted of prediction and observation data. Observation data obtained from laboratory experiment included the distribution of drying air temperature as a function of axial distance and the average moisture content of product. Prediction data were based on three mathematical models, namely: mass, momentum, and energy balance equation. The mathematical models were employed to predict drying air temperature distribution and average moisture content of product.
The results of the research showed that the mathematical models can explain the behavior of fruit juice drying using concurrent spray dryer.
